DCP-D vs DCP-A: Choosing the Right Grade
Dicalcium phosphate is available in two forms: anhydrous (DCP-A, CAS 7757-93-9) and dihydrate (DCP-D, CAS 7789-77-7). DCP-D contains two molecules of water of crystallization, giving it a higher molecular weight (172.09 vs 136.06) and a correspondingly lower calcium content (≥22% vs ≥28.5%). DCP-D is generally preferred in applications where controlled hydration is desired, such as in certain baking systems, while DCP-A is chosen where minimum moisture and higher calcium density are required. Both grades conform to FCC 13 and JECFA and carry the E341(ii) designation.
