About Sodium Carboxymethylcellulose (CMC)
Sodium carboxymethylcellulose (Na-CMC, E466) is a water-soluble anionic cellulose ether produced by the reaction of cellulose with monochloroacetic acid under alkaline conditions. The degree of substitution (D.S.) determines solubility and solution behavior, while viscosity grade reflects the molecular weight of the polymer chain. The F1-6000 grade (5000–7000 CPS at 1%) provides a high-viscosity, stable thickening performance ideal for food systems requiring substantial body and texture.
